In the article, the different process that are utilized in the cultivation of lettuces by the Fresh Salads Ltd. Company. The methods used in producing lettuces are evaluated, described and developed and their utilization for several purposes across the year during the winter as well as summer has been discussed. The lettuce developed across the year has been provided to the supermarkets in UAE. The lettuce that is harvested by maintaining low temperature throughout the process is known as Iceberg Lettuce. The temperature has to be maintained low in order to maintain the quality of these lettuces and prevent them from deteriorating its quality. The harvesting process carried out with the help of rigs purchased and developed by the company has been evaluated. The picking process of these lettuces has also been described. At the same time, there are various devices that are used for the harvesting of lettuces and then picking them up securely without letting any damage to its quality. The output statistics have been developed for using the process to produce lettuces for supermarkets, wholesale markets and different processes carried in the industries has been obtained. The inputs and the outputs of the entire process are derived and they are evaluated as well as analyzed to obtain efficiency throughout the entire operation. The capacities of production during each stage of the lettuce production process has been developed and on the basis of it, the fluctuation in the output has been obtained. The output developed is then also compared to the actual capacity during the production of lettuce. The aim of the article is to develop the data regarding the production of lettuce across UAE.

Operations management- Case study
With the advancement in technology, there is a tremendous innovation introduced in the methods of producing lettuces. The methods used for harvesting lettuce have improved on a large scale and this has resulted in the consistency and sustainability of the lettuce production across UAE. It has been discussed in the article as providing fresh lettuce is a major concern that is required for multiple purposes in supermarkets, wholesale markets and several processed carried out in the industries that involve using and processing of lettuces. There are several processes that are carried out in order to maintain the quality, quantity as well as availability of lettuce throughout the year across the markets in UAE.
Literature review
There are different methods of harvesting and production that has been developed that involves implementation of advanced technology and strategy in the industry of manufacturing lettuces. There are different fertilization treatments that can be applied and carried out for increasing the yield and quality of the lettuce produced (Premuzic, Garate, & Bonilla, 2000).
Using automation technologies and other such devices for cultivating lettuces across the fields has been developed and implemented on a large scale in UAE. There are different systems and mechanics that are developed for increasing the quality as well as quantity of lettuce produced across the fields of UAE. At the same time, there are several functions and processes that are developed for increasing the production of lettuce in the fields and increase its availability throughout the year (Cho, Chang, Kim, & An, 2002).

Inputs and outputs of the transformation process described in this case
The input that has been provided in the cultivation of lettuces include the technology implemented, utilization of trays, crates and other such collectors during the process and several man hours that are provided by the laborers to harvest lettuces as well as by the managers to ascertain the required quality and standard followed in the produced lettuce.
The outputs include the different types of lettuces that are obtained and can be used for different purposes in different fields. It involves developing lettuces for the supermarkets, whole sale markets as well as for the industrial processes that require lettuce in it.
The transformation of the input to the output involves several processes to be carried out in such a way that there are many activities involved in it. It involves collecting the lettuces and then placing it in trays or crates and covering them in plastic bags to avoid its quality from getting deteriorated due to exposure to air. The weight and structure of lettuce is observed while cultivation and after ensuring its quality, it is being collected in the vessels that are used for the same.
Main operations objectives for the macro-operation
The main objectives of operations across the process is to ensure high quality of lettuces that can be used for human consumption across the super stores and whole sale markets. It also involves providing various preventive measures for saving the lettuce crop from getting damaged by the environmental conditions and also ensure that the quality of lettuce is not deteriorated during the entire process of collection, harvesting and picking of lettuces across the fields in UAE. The main objectives are described as follows:
Speed: There would be collection of trays every 7 seconds, labelling on the code in 2 seconds and 15 seconds to fill the trailer. It has also been obtained that there is about 8 seconds used for cutting of iceberg lettuce on an average.
Quality: The quality has been continuously scanned through the cultivators and the managers present at the end of the chain for providing quality assurance.
Flexibility: There is a huge flexibility available in the methods used for cultivating and collecting lettuce
Cost: There has been an increase in the cost of production of lettuce due to the emphasis on quality. However, it gets covered from the revenue generated by the high quality lettuce in the markets.
Dependability: There is extensive dependability on technology and quality that has to eb acquired while collecting the iceberg lettuce and this plays an important role in developing its dependability in the food industry.

Type of process and the layout used in this unusual operation
There is a straight forward and multiple tasks operations used in the production and cultivation of lettuces from the fields while ensuring its quality throughout the process. The layout used in the unusual operation involves inspecting the quality at each and every stage of collection and cultivation. It involves a continuous screening of the lettuce for various purpose that are performed in the operations.
Capacities for each part (micro operation) of the Iceberg rig
The calculation of the capacity of each and every part has been obtained and on the basis of it the quantity of lettuce that is produced across the different processes has also been determined throughout the operations. It involves considering the processes that are used for the development of cultivation process and then picking of the lettuce from the fields. For the supermarket, there are 1800 trays which means 18000 lettuces as there are 10 lettuces in each tray for supermarkets. For the whole sale market, there are 230 trays which means 2760 lettuces as there are 12 lettuces in each tray of wholesale market. Similarly, there are about 200 crates for the industrial process which accounts for about 4000 lettuces as there are about 20 lettuces in each crate that is used for the industrial processes.
Estimating the total capacity
The total capacity involves estimating the total amount or quantity of lettuce that is being produced through the fields in UAE. The total daily capacity of the process can be obtained as 1800 trays consisting of 10 lettuces each, 230 trays of 12 lettuces each and about 200 crates consisting of about 20 lettuces each. This output is for different purpose and it has been differentiated as per the quality and application where it is being used.
Balancing the capacities and factors that adversely affect this balance
There are certain factors that affect the capacities like increase in the mud content of the field that is very common during wet weather in UAE. There is a considerable decrease in the efficiency of machines to collect, cultivate and pick lettuces from the fields.
Comparing the actual output to the capacity
The actual output that has been provided through the cultivation and collection of lettuces has helped in providing lettuces across the year in the markets as well as industries in UAE. The actual output that has been developed across the three sections of utilization of lettuces is about 24760 lettuces per day for about 8 hours of working in the fields.
Evaluation of the operations management tasks involved in running all six rigs
There are several operations carried out during the production of lettuce and this include:
Harvesting, Picking and screening of lettuces. The operations that are carried out in all the six rigs are very critically handled and controlled. There are six rigs that consists of an individual Iceberg lettuce machines that have been used in the form of plants that process lettuces for various purposes. There is high level of quality assurance provided by the managers across the system. It involves screening of lettuces at each and every stage and as a result the best lettuces are made available for human consumption in the supermarkets and wholesale markets. The lettuces that have deteriorated quality, but ca neb used are taken in to the industries and the lettuces that cannot be used for any purpose are buried in the soil to increase its production.
Thus, it can be seen that adapting technology in the cultivating and picking of lettuces has helped in increasing the production. However, there is a huge scope of improvement through the use of mechanics and similar system for the development of output through the different operations carried across the fields. There is a significant impact of the methods that are used in the quality and quantity of production of lettuces across the plants.
